Arcane Treatise 293Gâteau du Cielbutter1 cup sour cream1/2 cup buttermilk1/2 cup Greek yogurt1.5 pounds creamcheese, chopped and room temperature4 large eggs, room temperature3/4 packed cup brown sugar4 tangerines, zest finely grated, then juicedstrained pulp of 8 passionfruits1 tablespoon vanilla extract2 tablespoons all purpose flourground nutmeg to tasteground cinnamon to taste1) In a large bowl, combine sour cream, buttermilk, and yogurt. Let stand until room temperature.2) Preheat oven to 500 degrees Fahrenheit. Generously butter an 8-ince springform cake pan.3) Pour half of cream into the bowl of a standing mixer, and gradually beat together half of creamcheese, then one egg, then remaining cream, then sugar, tangerine juice, tangerine zest, remaining creamcheese, vanilla, flour, and remaining eggs one by one. Make sure batter is beaten smooth.4) Pour batter into pan and bake in lower one-third of oven. &
Arcane Treatise 292Mizu Shingen Mochi1 teaspoon granulated sugar1 tablespoon agar4 tablespoons minced fresh fruit2 cups boiling watercooking oilmolasses or kokumitsu (brown sugar syrup)soybean flour (kinako)1) Combine sugar and agar in a small saucepan. Gradually dribble in one cup of boiling water while stirring vigorously.2) Raise heat underneath the pan to high, and bring to a boil. Stir in remaining cup of boiling water.3) Dab a paper towel with oil, and lightly coat the insides of four teacups. Fill the teacups halfway with agar solution, then add one tablespoon of minced fruit to each cup. Now carefully pour in remaining solution, and chill in refrigerator until firm.4) Turn the cups onto plates or trays, and garnish with syrup and flour. Serve immediately.
