Arcane Treatise 252Stuffed Morels with Ink
12 dried morels
1 cup whole milk
1 fresh, uncooked jumbo shrimp, shelled and minced
10 ounces ground pork
1 ounce dried woodear
12 young or fresh shaggy mane mushrooms (or 12 straw mushrooms), diced
2 tablespoons cornstarch
3 tablespoons black sesame seeds
1) Soak morels and woodear in milk. Once woodear is soft, remove it, chop it and reserve. When morels are pliable, remove and reserve. Grease a sheet of parchment paper with butter and place it on a baking pan. Preheat oven to 250 degrees Fahrenheit, then reserve milk.
2) Break one egg in a small mixing bowl and beat thoroughly. Combine beaten egg with shrimp, and woodear. Place pork in a medium mixing bowl, and fold egg mixture in. Knead pork until thoroughly mixed.
3) Divide the pork into 12 equal-sized balls. Roll each ball into a cigar-shape. Insert each cigar into each morel.
