Arcane Treatise 215Treasure Compote

1 Fuji apple, peeled, cored, and diced
1 Granny Smith apple, peeled, cored, and diced
1 Asian pear, peeled, cored, and diced
1 large lemon, diced
3 kiwis, peeled and diced
1/2 cup creme sherry or plum wine
10 Chinese dates
1 cup brown sugar
1 teaspoon 5-Spice

1) In a shallow, non-reactive saucepan, or a non-stick skillet, toss together fruit with sugar, dates, sherry, and 5-Spice.  Let sit for half an hour or more in order to let fruit macerate or release their juices.

2) Raise heat to high, and bring to a boil.  Let simmer, at medium, for 15 minutes, or until fruit becomes translucent.  Gently shake the pan once every 5 m
Arcane Treatise 214Xia Shrimp Balls

1 pound shelled and deveined raw shrimp
5 ounces boiled lotus root
eggwhite of 1 large egg
1/2 teaspoon 5-Spice
1 teaspoon brown sugar
2 tablespoons soy sauce
1 cup dashi
1 teaspoon sesame oil
1/2 teaspoon miso paste
1 teaspoon fresh ginger
1 teaspoon cornstarch
2 tablespoons white sesame seeds
2 tablespoons black sesame seeds

1) Rinse shrimp in cold running water.  Pat dry with paper towel.

2) Add shrimp, together with all ingredients, except for soy sauce, dashi, and sesame seeds, into a blender, blending until mixture is sticky and cohesive.

3) Dryfry sesame seeds in a wok over high heat, either together or separately,

The Dromomerycids were a family of deer/antelope-like ruminates that lived during the Miocene... I think the majority of them were native to North America.
The three-horned monster is Procranioceras skinneri, while the four-horned beast behind it is Sinclairomeryx riparius. The small, ring-horned buck is Rakomeryx sinclairi.

Oh wait I think I get it... the long scorpion tail looking bit is the third antler.

(thats quite cool!)
I thought it was a kinky mane in the last pic.
